A Garlic Clove Minced
Two Tablespoons Of Diced Red Onion
Two Tablespoons Of Diced Fresh Tomato
A Teaspoon Of Chopped Fresh Italian Parsley
A Tablespoon Of Diced Pitted Kalamata Olives
½ Teaspoon Of Crushed Red Pepper Flakes
½ Teaspoon Of Black Pepper
3/4 Teaspoon Of Sea Salt
A Teaspoon Of Lemon Zest
The Juice Of ½ Lemon
Two Tablespoons Of Olive Oil
Preheat the oven to 375 degrees.
Place the cod fillets on a baking sheet and season both sides with ½ teaspoon of sea salt and ½ teaspoon of black pepper.
Place the garlic, the onion, the tomato, the parsley, the olives, the crushed red pepper flakes, 1/4 teaspoon of sea salt, the lemon zest, the lemon juice, and the olive oil in a mixing bowl. Lightly stir the ingredients.
Evenly spread the vegetable mixture over the top of the cod fillets.
Roast in the preheated oven for 35-40 minutes. Serve while hot.
